Some of the most famous barbecue in the whole state is located a little over a mile away from The Academy Chorro, at Firestone Grill. With a total of four locations, the SLO venue has been in business for over 20 years, making it an icon.
Firestone’s claim to fame is their Tri-Tip sandwich, which is so good it’s captured the attention of the Food Network. A lesser-known cut of meat, the Tri-Tip steak is sliced, slathered with barbecue sauce, and served on a French roll.
If you’re looking for traditional barbecue fare, Firestone also serves up ribs and chicken. The aptly named “Pig Sandwich” is the shredded pork version of the Tri-Tip. While Firestone’s biggest draw is their barbecue dishes, you can also get burgers and tacos. Standard barbecue sides like coleslaw, beans, and garlic bread round out the menu—if you have room, that is.
If you have a vegetarian in your group, they won’t be limited to salads and French fries. Firestone’s menu includes a Veggie Avocado sandwich and a Garden Burger. The SLO location is open until 11:00 pm on Thursdays, Fridays, and Saturdays for your late night barbecue runs. For the hardcore Firestone fan, the restaurant sells hats and T-shirts.
